Marcie’s Caprese Salad

1 lb pasta, cooked (I like the mixed colored Fusilli)
8 oz. mozzarella
2 pt. grape tomatoes, halved
1/4 c. basil, thinly sliced, plus more for garnish

For the dressing:
1/2 c. extra-virgin olive oil
3 tbsp. red wine vinegar
1 tsp. Italian seasoning
Pinch of kosher salt
Freshly cracked black pepper

Directions:
1. In a large bowl, combine pasta, mozzarella, tomatoes and basil
2. In a medium bowl, combine, oil, vinegar, Italian seasoning and garlic. Season with salt and pepper and whisk until combined.
3. Pour dressing over pasta salad and toss to combine. Garnish with sliced basil and serve.

Marcie Maloy

Marcie Maloy is a native of Utah, but moved to Arizona 18 years ago. Before joining the team at Johnson & Associates, she worked at an estate planning company for several years. She brings experience in preparing legal documents, such as wills and trusts. She is currently studying Business Management through Brigham Young University-Idaho. Marcie comes from a large family and understands that taking care of family is very important. She currently is a caregiver for family members. She knows that caregiving can be a stressful yet rewarding experience and lends that same care and expertise in her work. She works closely with Lora Johnson doing ALTCS-Medicaid/Long term care planning.
